Romano (Романо) is a hard grating cheese, the cow’s-milk version of Italian Pecorino Romano—which is traditionally made from sheep’s milk. Known in the United States and much of the world simply as Romano, and in Argentina as Romanito, it is the most intense and salty of the grating cheeses. With a hard, pressed, and compact texture, a pale yellow color, and a distinct flavor that intensifies with aging, it is a classic for grating over pasta, often alongside Parmesan.
